White Heather 21 yr is primarily matured for 18 years in a combination of 1st fill American Oak Barrels, 2nd fill barrels and hogsheads, and Sherry butts, the blend is laid to rest for an additional 3 years in PX Puncheons, Oloroso Puncheons, and Appalachian Oak (medium toast/char) for the flavors to marry and the wood to impart additional depth and complexity.
The slumbering casks are kept under the watchful eye of billy until his discerning standards are met and the perfect balance of wood and spirit character is achieved.
Presented at 48% ABV, non chill filtered, no color added
47% malt whisky, 53% grain whisky

Nose: Beautifully soft background with heather honey, butterscotch, peat reek and hints of tannins.
Taste: Rich notes of heather honey, butterscotch, orange peel and soft tannins, with a wonderful presence of peat and smoke.
