A first and only of its kind - our full-bodied liqueur, rested in oak barrels, provides notes of dark cherry, clove, cardamom, and orange peel. This incredible aged sloe gin is most often enjoyed as a digestif on its own, but is known to show up in specialty cocktails around the Bay Area. It is also likely the only barrel aged sloe gin in the world.
Spirit Works Distillery was founded, in 2012 in the heart of Sonoma County in Sebastopol, California, by husband and wife team Timo and Ashby Marshall. The distillery is a highly respected and awarded craft spirits producer which house-ferments and distils craft Vodka, Gin, Sloe Gin, Barrel Gin, Barrel Reserve Sloe Gin and the all four-year Straight Wheat, Straight Rye, and Four Grain Straight Bourbon Whiskey onsite. Lead by one of the few female distilling teams in the U.S., Spirit Works Distillery is continually voted as Best Craft Distillery and Testing Room in Sonoma County. Utilizing their industry recognized skills, Spirit Works Distillery has also been contracted to produce some other very successful spirit brands in the market.
GRAIN TO GLASS
The process at Spirit Works Distillery is simple: whole organic grain is delivered to the Distillery where it is milled, mashed, fermented, distilled, and bottled (or barreled) – entirely on-site. The female lead distilling team takes this grain to glass approach believing it allows for more control of all aspect of the process, creating final delicious spirits whose quality has been strictly monitored every step of the way.
The Distillery's hybrid pot still was custom built by Carl Distilleries, Germany’s oldest family of still makers. Its unique design, engineered and built specifically for us, allows for multiple distillation techniques, producing not only vodka and gin, but also whiskey. The still has several components: a 1,000 liter copper pot, with two very different rectifying columns. The first, shorter column with five plates, is used in our proprietary whiskey distillations. The second, taller column has 21 rectification plates and reaches 26 feet high. Through this piece of equipment the distillery is able to produce a pure base spirit at over 95% abv in just one finishing run. This process creates the house-made vodka used as the base spirit for the Gin, Barrel Gin, and Sloe Gin.
Husband and wife team, Timo and Ashby Marshall bring a combination of British tradition and New World innovation to Spirit Works Distillery. Timo hails from a small coastal village in southwest England, where his family has been refining their sloe gin recipe for generations, using sloes handpicked every autumn. Ashby, on the other hand, has a deep passion and impressive palate for whiskey and its complexity. She was born and raised on the West Coast and is proud to be the first distiller in her family. Ashby and Timo met while working together for several years as sailors on environmental research vessels. Eventually, they moved to San Francisco and began dreaming of creating something unique and sustainable together. Originally, they hoped to join forces with an established distillery and create a traditional sloe gin based on Timo’s family recipe. However, as they researched, the grain-to glass process quickly became a central focus. They wanted to be involved in every step of the production process, so they set out to start their own distillery. Together, Ashby and Timo spent several years visiting and learning in other distilleries, enrolling in courses and workshops around the country, and apprenticing under several grain-to-glass mentors. After many years of dreaming, learning and planning, they discovered the perfect community in West Sonoma County and set up shop in The Barlow in Sebastopol. Today, they can be found working side by side at the distillery with their dogs, Bandit and Echo, producing grain-to-glass Vodka, Gin, Sloe Gin, Barrel Gin - and all four year aged - Straight Wheat, Straight Rye, and Four Grain Straight Bourbon Whiskey. Timo was also President of the California Distillers Guild from 2015-2016. They are incredibly excited to be able to share their passion and products made batch by batch, from grain to glass. Sole Gin Savage Thorn
- 1.0 oz. SWD Sloe Gin
- 1.0 oz. Blanco Tequila
- .75 oz. fresh lime juice
- .5 oz. agave nectar
Combine sloe gin, tequila, lime juice, and agave nectar into cocktail shaker and fill with ice. Shake and strain over fresh ice into rocks glass. Garnish with lime wheel.
- 1.0 oz. SWD Sloe Gin
- Dry Sparkling Wine
- Juice of a fresh lime wedge
Pour Sloe Gin into champagne flute. Top with sparkling wine. Squeeze juice of lime wedge into glass and discard wedge. Garnish with lime wheel.
