Rooted in the West Coast
Our story began when two people, inspired by the land and one another, took the first steps to realize their vision: creating and sharing finely crafted spirits that evoke a strong sense of place and embodied bold culinary artistry. Starting from scratch, Jason and Alayne MacIsaac gradually built their first distillery above their garage at home in Shirley, B.C., a humble Southern
Vancouver Island town whose original name was Sheringham. With appreciation of fine culinary experiences, we select botanicals that are abundant and in season. From sustainably foraged kelp from the Pacific Ocean to cherry blossoms and yuzu peel, our ingredients are of the highest quality and play an integral role in the overall expression of each spirit.

The Master Distiller
Jason believes that every chef has the same ingredients in their pantry, but the skill lies in how they balance each flavor to create a unique outcome. The skills needed to find harmony in high-quality ingredients in the kitchen are the same principles that apply to distilling exquisite spirits. With extensive experience in the culinary world, Jason uses culinary artistry and welcomes every opportunity to explore and refine his creativity and deepen his craft through distillation.

Seaside Gin Sour Seaside Gin Sour
2 oz Sheringham Seaside Gin
1 oz. Fresh Squeezed Lemon Juice
3/4 oz. Simple Syrup (50/50 sugar to boiling water)
1 oz. Egg White
Optional Dash of Bitters
Method: Add all ingredients into a shaker and give it a dry shake (no ice). Add ice and shake again. Strain into a coupe and top with a slapped mint leaf for garnish and aroma.

Gin Martini Gin Martini
1½ oz. Sheringham Seaside Gin
¼ oz. Lillet
1 tsp Olive Brine
Method: Add all ingredients into mixing
tin, stir, chill and dilute, strain into
Glassware: Martini glass
Seaside Party Punch Seaside Party Punch
12 oz Seaside Gin
12 oz Chilled Green Tea
4 oz Lime Juice
4 oz Simple Syrup
1 pinch Salt
Served: On the rocks
Method: Add all ingredients into a jug, swirl around 4-6 times, store in the fridge.
Once chilled split into eight portions in rocks glass over ice.
Glassware: Rocks glass
Garnish: Halved lime husk (from juice)
