TWICE TOASTED AND DOUBLE BLENDED
Our process starts by hand-selecting barrels to create a base blend and then dividing it into proprietary ratios. One finishing vessel gets imparted with toasted American oak that derives its enhanced sweetness from heating the inside of the barrel to caramelize the natural sugars in the wood. The other is finished with Toasted French Oak that brings out subtle flavors and a silkier texture which is more akin to wine aging. Once each component has the desired amount of oak character, the two are blended together once again to create an innovative and rich flavor profile.

Many companies source their whiskeys from the same usual suspects or use multiple mash bills from a single distillery. Even heritage distilleries only have 3 mashbills that make 30 different labels. Pursuit Spirits sought out the best whiskeys, regardless of location, and put an emphasis on developing products that compete against the most highly acclaimed and allocated bottles on the market. Pursuit Spirits partners with 4 distilleries across multiple states to create 6 specific mashbills with customized barrel char levels. Barrels age at their respective distillery to maintain terroir then are hand selected and shipped before being united. It’s a process that requires skillful blending to create a product that won’t be like anything else on the shelf. Enjoy this pursuit.
NOSE
An initial waft is met with a flamed orange peel followed by dusted dark chocolate roasted nuts.
TASTE
The chocolate notes continue with a hazelnut spread along with cherry cola on the palate.
FINISH
Familiar notes of toasted oak, cloves, and black pepper are prominent on the finish.
