Simon Haxton - Spirit Tsar Simon is a career rocket scientist who paid for college working as a sous chef and brew pub manager during the early years of the 90’s craft beer movement. He brings to Portuguese Bend a passion for experimentation and a need to challenge the status quo in order to bringing the best quality product to our customers. Son of a minister and organic farmer, he has emphasized honest transparency and sustainability as pillars of our company’s culture.
Delicious base for a homemade daiquiri or any tiki style cocktail.
Classic Daiquiri Ingredients2 oz PBD Queen’s Passage White Rum2 teaspoons granulated white sugar3/4 oz fresh lime juice (about 1/2 medium lime)DirectionsCombine lime juice, rum and sugar in a shaker and stir until sugar is completely dissolved. Add ice and shake vigorously. Strain into a coup glass neat or in a rocks glass over fresh ice. Garnish with a fresh lime wedge. Shake vigorously and strain into a martini glass or coup. Garnish with grapefruit peel and/or lime wheel.
