Simon Haxton - Spirit Tsar
Simon is a career rocket scientist who paid for college working as a sous chef and brew pub manager during the early years of the 90’s craft beer movement. He brings to Portuguese Bend a passion for experimentation and a need to challenge the status quo in order to bringing the best quality product to our customers. Son of a minister and organic farmer, he has emphasized honest transparency and sustainability as pillars of our company’s culture.

PBD Hemingway Ingredients 2 oz PBD Queen’s Passage White Rum 3/4 oz Fresh Lime Juice 1/2 oz Fresh Grapefruit Juice 1/2 oz Maraschino Cherry Liquor Directions Add all ingredients into a shaker with ice. Shake vigorously and strain into a martini glass or coup. Garnish with grapefruit peel and/or lime wheel.
