Simon Haxton - Spirit Tsar
Simon is a career rocket scientist who paid for college working as a sous chef and brew pub manager during the early years of the 90’s craft beer movement. He brings to Portuguese Bend a passion for experimentation and a need to challenge the status quo in order to bringing the best quality product to our customers. Son of a minister and organic farmer, he has emphasized honest transparency and sustainability as pillars of our company’s culture.

Rosa Collins
Ingredients
2 oz PBD Donna Rosa Gin
1 oz Fresh Lemon Juice
0.5 oz Simple Syrup
Soda Water
Directions
Add Gin, lemon and syrup to a shaker with ice. Shake and strain over a highball glass filled with fresh ice. Top with soda water to taste. Garnish with lemon twist
The Amelia (Aviation with PBD Donna Rosa Gin)
Ingredients
2 oz PBD Donna Rosa Gin
0.5 oz Luxardo Cherry Liquor
0.5 oz Violet Liquor (Giffords)
0.5 oz Lime Juice
Directions
Add all ingredients into shaker with ice. Shake and strain into a martini glass or coup. Garnish with a Luxardo cherry.
