Ultra Low Calories
24% ABV shochu, like Nankai White Oak, has lower calories per serving than vodka. A 1.5 oz shot of shochu has about 59 calories versus 90 calories for vodka.

Through the magic of distillation, there are NO SUGAR or CARBS in the final product, even if it is produced from sugarcane. And genuine shochu never has additives.

Nankai White Oak is distilled from 80% sugarcane and 20% rice, both of which are naturally gluten-free.

Our Story
Paul and Mai Nakayama went on their honeymoon in the spring of 2015 to Amami, Japan to visit her parents’ hometown. While at a local bar, Paul and Mai were introduced to a vacuum-distilled craft spirit. It was a black sugar shochu that was so easy to drink and so delicious that they enjoyed quite a bit of it. The next day they took a 12-hour boat ride to visit the distillery and learn more about their new favorite spirit.

On the plane back to Los Angeles, Paul and Mai couldn’t stop thinking about their honeymoon shochu and how much their friends in California would love it, too.

This was the beginning of Nankai Shochu and our mission to share shochu with friends old and new.

An Elegant Result
of woody aromas balanced with notes of vanilla, lychee, and banana on the palate. Crafted at 24% alcohol by volume for easy sipping and food pairing.

Shiitake Old Fashioned
An umami-forward and subtly sweet Old Fashioned riff featuring shiitake mushroom infused Nankai White Oak shochu, candy cap bitters and kokuto black sugar syrup.

Ingredients
Shiitake-infused Nankai White Oak shochu
1 bottle Nankai White Oak shochu
2 pcs Dried shiitake mushrooms
2 pcs Fresh shiitake mushrooms
Candy Cap Bitters
180 ml Aromatic Bitters e.g. Angostura Bitters
1 handful Candy cap mushrooms
Kokuto Syrup
1 cup Kokuto Sugar
Cocktail
2 oz Shiitake-infused Nankai White Oak
0.25 oz Kokuto Syrup
1 dash Candy Cap Bitters
Instructions
Shiitake-infused Nankai White Oak shochu
Add fresh and dry shiitake mushrooms to a 1 liter jar.
Pour 1 bottle of Nankai White Oak shochu into the jar.
Allow infusion to sit for 2 days.
Candy Cap Bitters
Add candy cap mushrooms to a small 300ml jar.
Add 180 ml of aromatic bitters to jar.
Allow infusion to sit for 10-14 days for full flavor.
Kokuto Syrup
Combine kokuto sugar and water in a small pot.
Allow to simmer until kokuto sugar has dissolved completely.
Allow to cool and refrigerate to be usable for 10 days.
Cocktail
Combine Shiitake-infused Nankai White Oak, kokuto syrup and candy cap bitters in a mixing glass.
Add ice and stir to chill.
Serve straight up in a coupe or in a rocks glass with a large ice cube.
