Every year, Tasting Room Manager Brenda Fisher offers a special holiday release available only to visitors at our Blanco distillery. These bottles have quietly become collectors' items among our regulars. This year, we asked Brenda if the distillery team could blend a batch large enough to share beyond our tasting room walls.
The answer is Jackalope.
Named for the mythical creature of the American West, Jackalope is as rare and elusive as its namesake: and the final release in our 2025 Wildlife Collection.

Brenda's selection delivers exactly what we love most in a winter whiskey: warm, sweet spice that makes you want to linger by the fire.
Other than the barrels from "The Answer," this lot has spent the most time with us at the distillery in Blanco—3½ to 4 years across some of the longest dry spells, extreme heat, and intense cold snaps the Texas Hill Country has to offer. The effect of that climate on Jackalope cannot be understated. The intense and unrelenting heat drove a level of complexity, depth, and viscosity seen only in much older whiskeys from other bourbon-producing regions.

Color: Mahogany
Nose: Cardamom, dill, shortbread, molasses, fresh cut oak. Opens to caramel, cocoa powder, and a pleasant nuttiness.
Palate: Big and chewy with candied nuts, honey, dark cherry, biscuit, creamed corn, and a pleasant ethanol warmth that coats the palate like a warm blanket.
Finish: Long and robust with baking spice, water cracker, and dark fruit. Leaves the chest warm long after the dram is gone. Perfect for a nightcap on a cold night.
