Inspired by our home in the Wicklow mountains, we wanted to capture the flavour of where we are from in our whiskey. The Irish oaks surrounding our home represented the perfect opportunity to do so in a meaningful way. Our Pot Still Irish Whiskey is finished in 250 litre hogshead, slow toasted Irish oak casks. These trees are harvested in the Wicklow mountains under a Continuous Cover Forest Management System in which we plant 7 saplings for every oak felled. This whiskey makes available the flavours of Irish oak to everyone. The Irish oak complements and balances the classic pot still spices with notes of cinnamon & nutmeg.
