When drilling a subsea tunnel connecting two of the islands, a million-year-old reservoir of fresh water was found below the seabed. We immediately became intrigued, and discovered that the water was of extraordinary quality and clarity, with a distinct taste that we knew we had struck gold. The water turned out to be extremely well suited for distilling, creating a very clean and smooth vodka with a distinct oceanic character. Adding a little distilled seaweed provides a bit of nuttiness and floral notes to the slightly salty taste.
Filtered through layers of rock for thousands of years, the water is rich in minerals which contribute to the complex flavour.
