ELLENSBURG DISTILLERY CRAFTS A TRULY ARTISANAL
spirit with a hands-on focus that begins in our lavender fields and ends when you taste our one-of-a-kind gin. The inspiration behind amethyst was a combination of our shared passions. We already loved lavender, and were known for the unique varieties we grow. Our experience designing and building specialty machinery would allow us to craft our own proprietary stills, designed specifically to bring out all the delicate nuances in our lavender gin. So we became the second craft distillery in the state of Washington and set to work. All the magic happens at the farm:
the lavender is grown, harvested, carefully dried and prepared by hand. We meticulously select the blend of botanicals that are vapor-distilled to exacting parameters of flavor, balance and aroma. We even bottle by hand, frequently with the help of our friends and neighbors, turning the whole event into a party with really good drinks. Now, Amethyst’s attention to detail and superior smoothness has caught the notice of key bartenders and mixologists across the country. People praise its subtle taste, easy blending, and meticulously handcrafted origin that raises the bar on what ‘artisanal’ really means
"While there are soft floral notes, there's also pepper, cardamom, bitter orange peel, and a hint of chamomile on the palate.
".... I think it is perfectly balanced and subtle and among the best craft gins I've tasted in a long time."

“Lavender blooms right under your nose: round, rich, and generous. The flavor is actually vapor distilled into this 90-proof corn-based gin from Ellensburg, Washington. White-washed vanilla “candle wax” surrounds a clean, enduring and subtly perfumed liquid lavender, hand-grown on the distiller’s farm. No bitterness—just pleasure.”

“While there were plenty of longtime industry vets in the room, there was one notable newcomer in Ralph Bullock, owner of Wildcat White Whisky and Amethyst Lavender Gin. Bullock and his wife, longtime lavender farmers, have entered the spirits business with two Washington State–produced products that are truly handcrafted and unique. “I’m a whiskey drinker,” said Bullock, who grows the lavender that goes into Amethyst, “but I’m just completely captured by this product.” We couldn’t agree more, and fell in love with the delicate, super-smooth gin, which offered lovely floral aromatics that would shine in simple springtime recipes.”
