This award winning "mosto verde, acholado" style Peruvian Pisco, formerly known as Pisco Portón, is sustainably harvested and hand-crafted at the oldest distillery in the Americas, Destilería La Caravedo, Est. 1684. Method of Production: Single-distilled to 43% ABV (86 proof) requiring approximately 8 kilos (18 lbs.) of a blend of quebranta, torontel, italia and albilla grapes to produce one 750ml bottle. Distilled from partially fermented grape juice (pure wine--no pomace) and rested a minimum of one year—six months for each varietal and another six months after assemblage--with no additives of any kind: no color, no water, no sugar, no wood flavoring. Distilled through alambique copper pot stills and traditional falca stills.

Distilled entirely from wine and unaltered without even the addition of water. Caravedo Piscos are a mixable and versatile white spirit dedicated to honoring the spirit of tradition, craft, and adventure.
Caravedo Piscos smooth flavors go back centuries, almost four to be exact.

Like all good things, pisco began as an act of rebellion. In 1641, the King of Spain—Philip IV—imposed heavy taxes on all wine produced in Peru. His new world subjects dodged the onerous tax by distilling the year’s grape harvest. In hand-forged copper vats nearly four centuries ago, a new white spirit was born and christened pisco, a reference to the Port of Pisco from where this new spirit was exported and which means ‘little bird’ in the indigenous Quechua language. To this day, Peruvians call it their native spirit.

Pisco can boast what only a handful of other spirits enjoy: a Denomination of Origin. This means, quite simply, that all pisco must be made in a specific region and under the strictest of guidelines. All piscos are made in distilleries along the southwestern coast of Peru and must be distilled from any of eight specific aromatic and non-aromatic grape varietals: Quebranta, Negra Criolla, Mollar, Italia, Moscatel, Albilla, Torontel, and Uvina.


In its distillation, pisco is made in small batches, crafted in traditional copper pot stills and left unaged or unaltered. This means that not even water is added to the finished product. Pisco is distilled to proof, a rarity in a world where spirit makers distill to high alcohol levels and then add water to dilute to their desired proof.

1 ½ oz. Caravedo Mosto Verde
½ oz. St. Germain Elderflower Liqueur
¾ oz. Lemon Juice
½ oz. Simple Syrup
3 Basil Leaves (one for garnish)
Method:
Combine all ingredients except pisco into mixing tin and muddle. Add pisco, fill with ice and shake. Double strain out into a short glass with fresh ice. Garnish with basil leaf.

2 Jalapeño Slices (one for garnish)
2 Rosemary Sprigs (one for garnish)
Method:
Combine all ingredients except pisco into a mixing tin and muddle. Add pisco, fill with ice and shake. Double strain into a short glass with fresh ice. Garnish with jalapeño and rosemary sprig.

FLAVOR CHARACTERISTICS: rich, warming, full bodied, intense, creamy texture includes characteristics of cinnamon, orange blossom, chocolate and citrus. FINISH: complex and smooth, long and luxurious.
