When our Rye hit four years old, we were pleasantly surprised by the density and clarity this benchmark revealed, with darker chocolates, more acidic dried fruits, and a refreshing solvency. We have become so familiar with the dance we have learned to step in our intense Texas climate, that new plateaus of elegance and balance in our spirits are much appreciated and hard won.
100 Proof (ABV 50%)In 2008, Balcones was nothing more than an idea driven by a passion to create something original and authentic, right here in the Heart of Texas. It all started in an old welding shop under a bridge in Waco. For the next year, we replaced the roofing, knocked out walls, laid brick, cut pipes, installed copper pot stills from Portugal, and shoehorned a whisky distillery inside that quaint building. Proud of what we had accomplished on our own, we began distilling in 2009.
ON THE PALATE, it begins with graham cracker crust, dark chocolate espresso bean, and cardamom before well-articulated notes of carrot frond, cedar chest, and apricot preserves. Nutella and blackberry jam on rye toast linger for the finale.
Rye Manhatan
INGREDIENTS
1 oz Balcones Rye Bottled in Bond
1/2 oz Vermouth
2 dashes Bitters
RECIPE
Combine all ingredients in a chilled mixing glass. Add ice and stir. Strain into a coupe and garnish with an expressed orange twist.
