Angels & Cowboys Brut is crafted in the traditional Méthode
Traditionnelle. This method consists of allowing a wine to go
through a second fermentation inside the bottle which produces
small, fine bubbles and a creamy mouthfeel.
Iconic Champagne varieties of Pinot Noir and Chardonnay were
sourced from our favorite vineyards in Northern California,
including Mendocino, Sonoma and Solano counties, to produce
this delicate and complex Brut. Each exemplify the terroir of the
region and contribute their unique flavor profiles and aromas to
our blend.
After our wine completes 16-month en tirage (aging on the lees),
a traditional dosage of liqueur dʼexpedition is added for balance
and complexity. The base wine blend contains 24% reserve wines
(from a perpetual reserve).
This Méthode Traditionnelle Brut exhibits attractive notes of
golden delicious apple and citrus blossom. Fresh and zesty on the
entry, the enduring bubbles release fragrant toasted brioche and
roasted almond. A creamy finish completes the profile of this
elegant blend.

ABOUT ANGELS & COWBOYS
Yoav Gilat
Born and raised in Tel Aviv, Yoav left a promising career as a lawyer to follow his passion for food and wine. While working as a legal advisor to some of the largest food and hospitality companies in Israel, he realized he was much more interested in their core business than the legalities surrounding it.
After moving to the food and wine centric Bay area, armed with a business degree from UC Berkeley’s Haas School of Business and the Columbia Business School, he established a network of contacts in California’s wine country. As a passionate wine lover himself, he noticed a gap in the marketplace, no one was making high quality California Cabernet Sauvignons in the $20 and under price point. Combining his business acumen, legal knowledge, and passion for food, wine and California, he decided to pursue his entrepreneurial dream and launched Cannonball Wine Company in 2006.
