A full Summer in the making, our Spiced Peach Liqueur is a labor of love from the orchard to the bottle. Twice a week from June - August we drive out to Dry Creek Peach, pick up a truck load filled with 5-gallon buckets of fallen peaches, bring them back to the distillery and spend the Summer mornings hand pitting, pureeing and fermenting in order to collect enough for this very special batch. Once the fermentation’s complete, we distill twice in our copper alembic pot stills, and rest the spirit on toasted french oak with an array of baking spices.

Krystle and Jason Jorgensen founded Alley 6 Craft Distillery in 2012. As artisans and business owners, the Jorgensen’s process is defined by a love for the craft and a deep appreciation for spirits.
Alley 6 is, first and foremost, a small independent family-owned business, built by thrifty nickels and a lot of brow sweat. Amidst some of the best wineries, cideries and breweries in the land, the distillery is a dream come true. Krystle & Jason first began to develop an interest in beer and winemaking after moving to Northern California. Jason started slinging drinks at a steakhouse where they sell some of the best whiskies in the world and soon fell head first into the craft-distilling arena. They began attending tastings and shows, touring local distilleries, and eventually going on a life-changing trip to Scotland.
They knew this was their life’s passion and could be happy making whiskey every day. Happy to say after many years of planning, practicing and endless daydreaming the first batch of Alley 6 Rye Whiskey hit the shelves Summer 2015.
Alley 6 is truly a small batch craft distillery that delivers you a one of a kind experience. The distillery produces premium spirits in small batches using traditional distilling techniques. Two 250 gallon Alembic Copper pot stills chug away to create our complex spirits. Every part of the process is done right here at the distillery in Healdsburg, Sonoma County, California—from milling the grain, to mashing, fermenting, distilling, barreling, and bottling. As a grain to glass distillery, Alley 6 is focused on quality ingredients, a hands-on process and unique flavor profiles. Experimenting with every step in the process has helped to better understand the effects of subtle choices on the final product resulting in spirits with deep complexity and character unlike anything you've tasted before.

The bouquet of peach hits you square in the nose, it smells like summer afternoons & no responsibilities. It tastes like a freshly baked peach pie, spiced and warm on the palate.
Peach Sidecar
1oz Cognac
3/4oz Alley 6 Peach Liqueur
1/2oz ginger liqueur
1/2oz fresh lemon juice
Dash of cardamom bitters
Absinthe rinse
Rinse a Nick & Nora glass or coupe with Absinthe by pouring in a small amount and swirling it to coat the inside of the glass. Discard any excess. Combine remaining ingredients in cocktail shaker and add ice. Shake to chill then strain into prepared glass. Garnish with whole star anise.
