The first tequila of Atotonilco!
The “El Viejito” distillery is a family owned company founded by Mr. Indalecio Núñez Muro in 1937 in the municipality of Atotonilco, in the “highlands” of the state of Jalisco. The Highlands offer excellent conditions for tequila production, among other things for having the best land, climate, water and altitude for growing Agave, and thus for the quality of the tequilas produced in this area.
“El Viejito” started to export tequila in 1964 and in 1986 was rewarded with the “National Quality Award”. In 1992 “El Viejito” received recognition as a “high quality exporting company and for participating in the international market and for its contribution to the creation of jobs” both from the Mexican Authorities.
Mr. Indalecio, and both his sons Jorge and Antonio were all Presidents of the National Tequila Industry Association and “El Viejito” was one of the founders of the Tequila Regulatory Council in 1994.
El Viejito currently exports or has exported to countries such as The United States of America, Germany, France, Chile, Italy, Greece, Japan, Australia and the Philippines.
“El Viejito” started operations in 2007 at its new distillery. High quality water, ripe agave, lots of experience combine to continue producing tequila as we did since the beginning. We take no shortcuts, in fact we are improving on perfection!
Modern and efficient facilities, joins commitment and integrity to improve social and economic development. In addition and in reflection of company values, “El Viejito” is currently in the process of obtaining a “clean industry” certification, and has just recently been certified in HACCP.
Full and complex notes in taste are complimented by earthy, white pepper and citrus aromas. Delicate spice and floral flavors add to the intensity of the agave.
GUY FIERI’S CALIENTE MARGARITA
[ Yield: 6-8 drinks ]
6 oz Santo Blanco Tequila
2 oz triple sec
1 bunch cilantro leaves
3 jalapeños (2 for muddling, 1 for garnish)
1 lime, cut into wedges
2 oz Homemade Sour Mix
Muddle cilantro and two jalapeños in the bottom of a large pitcher. As you are muddling, add tequila and triple sec. Stir the margarita well, adding sour mix as you go. Pour into glasses rimmed with salt and garnish with a lime wedge and jalapeño slice.
Homemade Sour Mix Recipe:
1 ½ cups sugar
1 cup fresh lemon juice
1 cup fresh lime juice
Mix together sugar with 1 ½ cups of water in a saucepan. Allow to simmer until the sugar dissolves. Remove from heat. Once it has cooled, add the lemon and lime juice and chill it until you are ready to use it.
GUY’S NOTE:
Spice it up! Substitute the salt rim with my Rojo Rim by mixing: ½ cup kosher salt, ½ Tbls each of black pepper (fresh ground), smoked paprika and Cajun seasoning, ¼ tsp each of chili powder and cayenne powder.
