Corbin Cash Distillery is based on their family farm in Merced CA, founded in 1917 by the great great grandfather of master distiller, David Souza. Primarily a sweet potato farm, David began distilling their cash crop in the early aughts in an act to promote a sustainable and waste free farming operation. Additionally, rye grain has been grown on the farm since its inception as a cover crop to keep the soil healthy during the winter months. After harvesting, the rye is double pot distilled and aged for a minimum of five years in charred new American oak. All spirits are planted, grown, harvested, fermented, distilled, aged, and bottled on the farm. Genuinely seed to sip, truly handcrafted products.
David Souza is a fourth generation farmer, running one of the largest sweet potato farms in California. He began working the fields at 7 years old and took on management responsibilities at 15. As he grew older, he began spending his winters in Las Vegas running restaurants and nightclub promotion businesses. His time is Las Vegas exposed him to the amount of “junk” spirits on the market and knew he could make something better. Returning to the farm with this in mind, he began experimenting with sweet potato distillation and later, rye. David firmly believes in using what is on hand and letting nothing go to waste. Farming taught David the value of effort and hard-work. The result of those lessons is apparent in every bottle of Corbin Cash Spirits.
