Canta-Keep Us Down
Add all ingredients to a shaker without ice. Shake very well until egg white becomes frothy. Add ice and shake briefly. Double strain into a footed coupe and garnish with a thyme sprig.
1.5 oz Gin
2 oz Cantaloupe Mix*
0.5 oz lime juice
1 egg white
Pinch of sea salt
Torn thyme leaves
1 cup freshly juiced cantaloupe
1/4 c diluted agave (1:1 ratio of agave : water)
Combine cantaloupe juice and agave, and store in a sealed container in the refrigerator for up to one week.
INTO THE WOODS
1.5 oz London Dry Gin
1 oz rosemary & anise syrup*
0.5 oz lemon juice
Topo Chico, or other sparkling water
Salted cinnamon & sugar**
Add gin, rosemary syrup, and lemon to
a shaker with ice. Shake well and strain
over fresh ice in a tall Collins glass
rimmed with salted cinnamon & sugar.
Top with Topo Chico and spritz with
maple spray. Garnish with a
dehydrated lemon wheel, star anise
and a stalk of rosemary.
*Rosemary & Anise Syrup:
1 c water
1 c sugar
4-5 rosemary stalks, stripped
1/4 c star anise pods
Bring all ingredients to a boil. Reduce
heat and let simmer for 15 minutes. Let
cool and strain into a sealed container.
Store in the refrigerator for up to one
**Salted Cinnamon & Sugar
Mix 2 tablespoons sugar, 1 tablespoon
salt and 1 teaspoon cinnamon together.
