This gin is infused with fresh tarragon in multiple intervals over the course of nearly 24 hours. This helps ensure the gin is imparted with a bright and clean tarragon flavor without becoming overly earthy or grassy. The result is truly one of the most interesting and complex gins on the market.
Sea Bishop Spirits is an award-winning artisan gin distillery in Black Diamond, Washington. We founded the distillery in 2014 and were fully licensed in 2016. Our facility is located about 30 minutes outside of Seattle under the shadow of Mount Rainier.
We pride ourselves on being a small business with strong local roots. Each of our gins is vapor infused, 100% handmade, and starts with pure spring water from the nearby Black Diamond Springs. This helps ensure we produce a cleaner and fresher tasting spirit without multiple rounds of filtering. All other ingredients are sourced from local vendors as well. Tailer and I manage each step of the distillation process to ensure a high-quality and consistent product.
John and Tailer Emrick founded Sea Bishop in 2014 with one mission: Make the best gin in the world. Both John and Tailer are Washington State natives and veterans of the restaurant and bar industry with Tailer having over a decade of experience as an executive chef. Together, they’ve become award-winning craft distillers who distill and package each bottle of Sea Bishop by hand.

Nose: Anise, tarragon, floral, sweet
Taste: Herbaceous with hints of juniper, pink peppercorn and orange peel
Finish: Sweet, anise, mild vanilla

1 oz Sea Bishop Tarragon Gin, .5 oz lemon juice, .5 oz elderflower liqueur Sparkling rosé
Shake all ingredients together with ice, strain into a champagne flute and top with sparkling rosé
