Simon Haxton - Spirit Tsar

Simon is a career rocket scientist who paid for college working as a sous chef and brew pub manager during the early years of the 90’s craft beer movement. He brings to Portuguese Bend a passion for experimentation and a need to challenge the status quo in order to bringing the best quality product to our customers. Son of a minister and organic farmer, he has emphasized honest transparency and sustainability as pillars of our company’s culture

PBD Cuba Libre
Ingredients 2 oz PBD Queen’s Passage Spiced Rum 2 tablespoons Fresh Lime Juice 3-5 oz Cola (Mexican Coke is best) Lime Peel
Directions Squeeze lime juice and lime peel into empty rocks glass. Muddle peel then remove. Add ice and rum. Stir gently. Top with Cola. Garnish with lime wedge.
PBD Old Cuban
Ingredients 1.5 oz PBD Queen’s Passage Spiced Rum 1 tablespoon Demerara Sugar 3/4 oz Fresh Lime Juice 1-2 dashes Angostura Bitters 6 Fresh Mint leaves Sparkling Wine to top (Champagne, Prosecco or Cava)
Directions In an empty shaker, muddle 3-4 fresh mint leaves with sugar for 1 minute. Add rum, lime juice and bitters. Add ice and shake until well chilled. Strain into a coup and top with sparkling white wine. Garnish with fresh mint leaves.
