The rocky arid region of Durango, Mexico is a picture of forgotten time with wild Maguey Cenizo (Agave durangensis) dotting the landscape. Scorpions and owls, symbols of defiance, solitude, and wisdom have colonized this harsh wilderness in much the same way as the agave. It’s here that we distill our Mezcal by roasting the agave in traditional volcanic rock pit ovens. The open fermentation allows the area’s wild yeasts to naturally inoculate the sweet agave mosto. Hints of smoke from the cooking process blend perfectly with the deep agave flavors, striking a balance in our signature Cutwater Mezcal.

Meet Our Founder
When our founder and master distiller Yuseff Cherney began making spirits, it was just a hobby in the back of his brewery. He custom-built his first pot still from an old beer fermenter to distill rum, vodka, gin, whiskey and more. Driven by his experimental nature and strong commitment to quality, Yuseff and his team have grown Cutwater Spirits from a passion project into an award-winning craft spirits brand. He swiftly pioneered a category with the introduction of Cutwater’s canned classic cocktails. Now, we can all enjoy a great cocktail in the places we want to be whether it’s fishing at sea, hiking abroad, or a backyard barbecue. You can still find Yuseff at our production facility in San Diego where he is focused on perfecting recipes for Cutwater’s ever-expanding range of exceptional spirits and canned cocktail offerings. INGREDIENTS
1½oz Cutwater Mezcal Joven
½oz Yellow Chartreuse
1oz grilled pineapple juice
½oz falernum
¾oz lime juice
DIRECTIONS
Add all ingredients to a cocktail shaker. Shake until cold and strain over fresh ice in a Tajín rimmed collins glass. Garnish with a pineapple slice.
