Since 1917 Merced Rye has been grown on the soil of our family farm. This variety of rye is a natural fit for our California climate. It grows rapidly in cool weather and is naturally drought resistant. Our sandy soils tend to leach important fertilizers like nitrogen and potash. Merced Rye’s extensive root system can naturally mine these fertilizers from 13 feet and bring it back to the surface to be used in next year’s crop. Not only is Merced Rye essential for a sustainable farming environment, it also makes an award-winning whiskey.
Corbin Cash Distillery is based on their family farm in Merced CA, founded in 1917 by the great great grandfather of master distiller, David Souza. Primarily a sweet potato farm, David began distilling their cash crop in the early aughts in an act to promote a sustainable and waste free farming operation. Additionally, rye grain has been grown on the farm since its inception as a cover crop to keep the soil healthy during the winter months. After harvesting, the rye is double pot distilled and aged for a minimum of five years in charred new American oak. All spirits are planted, grown, harvested, fermented, distilled, aged, and bottled on the farm. Genuinely seed to sip, truly handcrafted products.
