117° West Gin is a traditional style Genever with a West Coast twist. Genever is the original gin from Holland produced beginning in the 1600s. This traditional style is pot-distilled from malted grain (barley, wheat and rye). The fresh West Coast twist is the addition of hops along with hibiscus, white sage and cacao nibs. Tastes delicious in a Negroni or Tom Collins, also pairs well with ginger in a Gin Buck or makes an amazing Gin ‘n Tonic.

Here at 117° West Spirits, we embrace the tradition and innovation of craft spirits. We opened in December of 2017 in Vista, CA and have been striving to produce quality California spirits since day one. The recipes are built on old styles like Genever Gin or Single Malt Whiskey, but we aim to create new flavors by using unique blends of high-quality ingredients inspired by the craft beer world along with a one-of-a-kind still. The Alexandria Still with a Gatling column is truly unique and is the workhorse of our operation. It utilizes direct steam distillation, which results in a soft and flavor-forward spirit that features the quality of our ingredients. Nearly all of our malted grain comes from Admiral Maltings in Alameda, CA who source all of their grain from California farms. Our ultimate goal is to produce the finest California Whiskey you can find.
Justin McCabe discovered a passion for craft beer while working on his PhD in Chemistry at UC San Diego. While teaching high school chemistry, he honed his skills in brewing and became inspired by several friends to consider opening a brewery. Upon encountering a book called Alt Whiskey by Darek Bell of Corsair Distillery, Justin decided to turn his love for craft beer and knowledge of chemistry into a career turning craft beer into whiskey. As co-founder and head distiller at 117° West Spirits, Justin continues to work with his team to innovate on flavors and processes to produce the best whiskey in the West.
