Simon Haxton - Spirit Tsar Simon is a career rocket scientist who paid for college working as a sous chef and brew pub manager during the early years of the 90’s craft beer movement. He brings to Portuguese Bend a passion for experimentation and a need to challenge the status quo in order to bringing the best quality product to our customers. Son of a minister and organic farmer, he has emphasized honest transparency and sustainability as pillars of our company’s culture
Complex and flavorful Perfect for Martinis and Tonics
1 oz PBD Smoke Bay Gin
1.5 oz Pimm’s No. 1
1 oz Lemon Juice
1 oz Ginger Beer
0.5 oz Simple Syrup
Muddle a cucumber slice in a shaker. Add ice and all other ingredients except ginger beer. Lightly shake and strain into a highball glass, Top with ginger beer. Garnish with fresh mint and cucumber slice.

2 oz PBD Smoke Bay Gin
3/4 oz Fresh Lime Juice
0.25 oz Simple Syrup (optional)
4-5 oz Soda Water
Pour gin, lime juice and simple syrup into a rocks glass with ice. Stir gently. Top off with soda water. Garnish with a wedge of lime.
