Handcrafted in small batch copper-pot stills, Empress 1908 Gin is a collaboration between Victoria Distillers and the legendary Fairmont Empress Hotel in Victoria, British Columbia. In addition to more traditional botanicals, we add a signature blend of black tea served at the Empress Hotel, and butterfly pea blossom, an exotic herb that balances the traditional citrus notes of gin with a warm herbal earthiness, and natural indigo color. Empress 1908’s combination of exquisite taste, delicate aroma, soft texture, and remarkable presentation provide the perfect base for a new aesthetic of cocktail creation and enjoyment.

Empress 1908 is a remarkable spirit that could have only been created in the city of Victoria, on beautiful Vancouver Island, in Canada’s British Columbia, where rugged mountains meet the beautiful Pacific Coast. It is a place where tradition is honored, nature is revered, and artistic expression drives innovation. Empress 1908 is a collaboration between the legendary Fairmont Empress Hotel and the not-quite-yet legendary Victoria Distillers, one of Canada’s oldest artisan distilleries. It is a partnership that combines tradition, nature, creativity, and a touch of audacity. Built in 1908, the Empress Hotel is known for its stately Victorian architecture, picturesque setting, and regal afternoon tea service. We started our collaboration by exploring 20 different teas from the Empress Hotel for our recipe. We eventually selected the signature Empress Blend Tea to provide hints of floral and fruity flavors for the gin. We invite you to join the Empress 1908 story by creating—or simply enjoying— a new aesthetic of stunning cocktails. The moment of creation is at hand.
Meet President and Master Distiller, Peter Hunt. Peter helped lead the team that created Empress 1908 Gin. Before becoming President of Victoria Distillers, Peter Hunt was Master Distiller for nine years. A previous decade of bartending and bar managing experience, a master's degree in molecular biology, and work at the BC Cancer Agency's Genome Sciences Centre, provided an ideal foundation for making fine spirits. Peter had just completed his master’s in molecular biology when he decided to leave his career as a scientist to work full time as a distiller. This new career path has led Peter to create the award-winning spirits at Victoria Distillers. Without Peter’s adventurous spirit we wouldn’t have Empress 1908 Gin!

INGREDIENTS 2OZ EMPRESS 1908 GIN 1/2OZ FRESH LEMON JUICE 1/2OZ SIMPLE SYRUP BASIL, THYME, ROSEMARY & MINT LEAVES METHOD Lightly muddle herbs and shake ingredients over ice. Strain into a stemless wine glass with ice. Garnish with a sprig of rosemary.
ROYAL HAWAIIAN Tall, tropical and tasty. If you’ve ever wanted a sip of sunshine, the Royal Hawaiian is as close as you’ll get. INGREDIENTS 1½OZ EMPRESS 1908 GIN 1OZ UNSWEETENED PINEAPPLE JUICE 1/2OZ FRESH LEMON JUICE 1/2OZ ORGEAT SYRUP
PINEAPPLE SLICE METHOD Shake all ingredients except gin with ice. Strain into a collins glass with crushed ice, layer gin on top. Garnish with a pineapple wedge.
